Ingredients:
-Chanay (Roasted gram) 4 tbs
-Sabut lal mirch (Button red chillies) 8-9
-Zeera (Cumin seeds) 1 tbs
-Laung (Cloves) 7-8
-Darchini (Cinnamon stick) 1
-Khashkhash (Poppy seeds) 2 tbs
-Ajwain (Carom seeds) ¼ tsp
-Boneless chicken breast piece ½ kg
-Boneless chicken thigh piece ½ kg
-Podina (Mint leaves) 1 tbs
-Hara dhania (Fresh coriander) 1 tbs
-Pyaz (Onion) 1 large
-Pyaz (Onion) fried 3 tbs
-Hari mirch (Green chillies) 3
-Adrak lehsan (Ginger garlic) crushed 1 tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Namak (Salt) 1 tbs or to taste
-Garam masala powder 1 tsp
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Dhania powder (Coriander powder) 1 tbs
-Haldi powder (Turmeric powder) ½ tsp
Prepare Easy Kofta Curry with Steamed Koftay:
-Khashkhash (Poppy seeds) 2 tbs
-Pyaz (Onion) fried ½ Cup
-Water 4-5 tbs
-Dahi (Yogurt) 1 & ½ Cup
-Tomato paste 2 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Garam masala powder 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Kashmiri laal mirch (Kashmiri red chilli) powder 1 tsp
-Dhania powder (Coriander powder) ½ tbs
-Cooking oil 5 tbs or as required
-Water 1 & ½ Cup or as required
-Podina (Mint leaves) chopped
-Hara dhania (Fresh coriander) chopped
-Hari mirch (Green chillies) 3-4
-Hara dhania (Fresh coriander) chopped

Directions:
-In a frying pan,add roasted gram,button red chillies,cumin seeds,cloves,cinnamon sticks,poppy seeds,carom seeds & dry roast until fragrant.
-Let it cool.
-In a spice mixer,add roasted spices & grind to make powder & set aside.
-In a chopper,add chicken,chicken boneless thighs,mint leaves,fresh coriander,onion,fried onion, green chillies,ginger garlic,Kashmiri red chilli powder,salt,garam masala powder,red chilli powder,coriander powder,turmeric powder,ground mixture & chop until well combined.
-Grease hands with oil,take a small quantity of mixture (50g) & make koftay of equal sizes (makes 24-25).
-In a steamer,add water & bring it to boil.
-Place steamer rack & koftay,cover & steam cook on low flame for 8 minutes.
-Bring them to room temperature.
-Place them on a tray & freeze for 6-8 hours.
-Koftay (meatballs) can be stored in freezer (zip lock bag) for up to 4 months.
Prepare Easy Kofta Curry with Steamed Koftay:
-In a spice mixer,add poppy seeds,fried onion,water,grind well to make a paste & set aside.
-In a bowl,add yogurt,tomato paste,ginger garlic paste,ground paste,red chilli powder,salt,garam masala powder,turmeric powder,Kashmiri red chilli powder,coriander powder,whisk well & set aside.
-In a wok,add cooking oil,prepared spiced yogurt,mix well & cook on medium flame for 2-3 minutes,cover & cook on low flame until oil separates (4-5 minutes).
-Add water,mix well & bring it to boil.
-Add frozen steamed koftay 8-10,mint leaves,fresh coriander,green chillies & mix well,cover & cook on low flame for 24-25 minutes.
-Garnish with fresh coriander & serve with naan.
